I've been doing really well eating paleo the last...ummm...5-6 weeks? Anyway...a big problem I've had is that when the day is over, I'm way down at 800-900 calories for the day, which is NOT healthy, ya' know?
Enter the chocolate mug cake. It's perfect for boosting the calories for the day. I found a good one, too; it is, in fact, my favorite from all of my searches. However, it was too heavy on the calories and fat for my purposes, so I started playing around with it.
Many failed attempts...and some nearly there's later, I finally got to my favorite mix. So, here it is.
1 egg
1 egg
3 Tbsp lite coconut milk (in the can)
1 Tbsp maple syrup (more if you'd like it sweeter)
1/4 c unsweetened applesauce
1/4 c unsweetened applesauce
1 banana
3 Tbsp coconut flour
3 Tbsp cocoa powder
1/4 tsp baking powder
Mix it all up in a mug (or in a mini food processor, for smoother consistency). Microwave in the mug for 2 1/2-3 1/2 minutes.
That's it. Super easy, right?
